One of the most straightforward dishes in terms of ingredients, but also one of the most flavourful, is the chickpea farinata. A ‘farinata’ is a sort of thin, unleavened pancake. The region of Piedmont has adopted and adapted the recipe from the region of Liguria, where it was first created. Our version is a deliciously light meal, which can be eaten hot or cold. Practically packed, it is offered in its two most classic varieties.
